First of all, the 80s is not the "original way." Secondly, The Alvin Show was never released completely on Blu-ray. As for your questions, probably not. The 80s is and will likely always be its own style that's never used again. And who knows? We still haven't gotten a complete collection of any of the series, let alone on Blu-ray. At this rate it's not likely.
Releasing the material is like asking for the impossible. US copyright law is so ridiculous that they aren't allowed to, even if they payed the royalties to the artists whose songs they covered. As for TAS, it's very likely a disrtibutor problem, as all songs used on there are in the public domain and they have the footage archived in their possession. TAS's distribution rights are actually owned by Viacom, who owns the current iteration's distribution rights as well.
The distribution rights to the 80s series is split between three companies, so that makes it difficult. Strangely enough, Disney owns the rights to the last three seasons (minus eleven from season six). Ruby-Spears is either owned by some company called RS Holdings or Warner Media, the site doesn't make it clear which one the Chipmunks distribution rights were sold to, as both companies each have Ruby-Spears properties. It's a logistical nightmare to distribute the show on home video, especially since you'd have to have two companies agree in order to distribute season six.
I beleive that a French copy of the entire first season of the current series was on Amazon US sometime in 2016 for a few months, but got pulled. I even checked French Amazon, and UK Amazon, but nothing. It's probably Viacom who pulled the plug on that one.
It's pretty evident that the current animated series uses a combination of that and the CG films in terms of overall chracter design.

As for the original question of this thread, they're not going to go back to the hand-drawn animation style of the 80s series because that method is simply outdated. All cartoons these days use either CGI or computer cell shading techniques.
I just searched Google for who owns the three distribution companies involved with the 80s cartoon. Viacom itself was spunoff from CBS' animation department in 2005. CBS distributed TAS back in the day when it first aired.
